Monster 1 destroys the opponents Fieldspell. It goes to Graveyard. What happens?
A: The Fieldspell activates its effect in Graveyard and get negated. Your opponent dont get the 1000 Life Points and draw 1 Card.
B: The Fieldspell goes to Graveyard. Your opponent draws 1 Card. (Monster 2 Effect does not negate Spell Cards now) Then the Fieldspell activates and generate 1000 Life Points.

The answer to this depends on what "Monster 1" and "Monster 2" exactly are and whether monster 1's effect is continuous or an effect that activates. Monster 2's effect is worded poorly. If it's meant to be a continuous effect (that doesn't activate), it shouldn't have any colon and should specify whether it negates spell card activations, spell effect activations, or spell effects themselves, as just saying "spell cards" is too vague.
Let's make monster 1 Kuraz, and monster 2 a Fabled Unicore. The field spell can be anything that floats, like Geartown.
Both players have the same amount of cards in their hand when Kuraz is summoned and uses its effect to destroy only Geartown. As part of resolving Kuraz's effect, the opponent will draw one card, then, in a new chain, Geartown will be able to trigger. Since the opponent no longer has the same amount of cards in hand, Geartown will not be negated by Unicore, and they will be able to Summon an Ancient Gear from deck.

If Kuraz's effect to draw was a trigger that also went on the new chain with Geartown, then whether or not Geartown is negated by Unicore depends on whether or not Kuraz goes on the chain first, which depends on what turn it is (assuming both triggers are mandatory). If Unicore prevented activations and Kuraz's draw was a separate trigger, then when Geartown attempts to trigger, both players still have the same amount of cards in hand so Geartown cannot.
